Bikini Recipe

Serves 10 servings

Ingredients for the Clementine Cordial (produces 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

To make the Cocktail (makes 850ml, to serve 10)

400ml premium vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Method

For the Citrus Syrup: Place all the items in a pot, heat until it reaches a simmer, stirring so the sugar melts. After that, remove from the heat and leave to reach room temperature entirely. Pour to a sealable bottle, close it and store in the fridge, where it will keep for up to one month.

Preparing the Batch Mix: Combine all the liquid ingredients in a big jug, leave to sit for one hour, then filter it , ideally through muslin, so it's fully clarified.

To serve: Add 85ml of your premix to a stirring glass containing ice, gently stirring lightly for a minute until cold. Pour into a frosted cocktail glass or a similar vessel, garnish with the cranberries and finish by giving it a quick spritz with the mandarin essence over the drink.
